5 Things Monday

My dear MacBook is slowly recovering... I still need to install some programs, like my photo editing software, but I have enough decent pictures for today's post! lol

5 Random things:


1. It was hell here in So. Cal. today!! It was 109 F. here in my city and I know it went up to 115 F. in some other places. I'm praying for some normal autumn weather soon!!


2. I'm getting ready for my most favorite holiday ever: Día de los Muertos!!!! Plus, I'm planning a lovely giveaway so make sure you check back in the next weeks ;) (Sorry for the crappy cell phone picture!!)

3. My little one turned 8 months yesterday!! It was too hot today to do our photo shoot, so hopefully it cools down tomorrow!


4. And talking about the little booger... we bought this skeleton body suit and the monster hat last year while I was still pregnant. We were saving it for this year's Halloween but it looks like he might be a little big for it by then, so we need to find him another costume!

5. Remember I've been making some jewelry?? Well, I was planning to open up my Etsy as soon as I had a decent amount of products to sell. BUT my mom took them to her job and sold almost all the earrings I had!!! I just ordered more supplies to stock up and hopefully open the store before Halloween!

My "other" baby got sick...

... And by "other" I mean my laptop, which is why you haven't seen any posts lately.
We took her to the Mac doctor yesterday and she's doing good. For a second we thought we wouldn't be able to recover all my photo my files, but in the end I got all my stuff back!!

I did lose my photo editing programs =(  so as soon as I get them back and running I'll post something for you!

Bicentennial Anniversary of Mexican Independence

Two hundred years ago we claimed our independence as Mexicans. We fought, we died, we sacrificed, and we became a nation.

 Tonight, thousands of Mexicans around the world celebrate with the famous "grito de independencia." I'm usually one of them... except this year. Tonight I dedicate a moment of silence to all the victims of the violence that has taken over the country... hoping it won't take another two hundred years to really be free.


¡Viva México!

Bento Lunch for Grownups

I've spending too much time over on this blog lately... and I have to say, I feel like I'm in first grade again, jealous of a classmate's awesome lunch!! I mean, bunny shaped cheese?? A-DO-RA-BLE!!

I'm already taking notes for when my little one goes to school!!

Anyway... since I've been going to the library almost everyday and usually end up getting fast food for lunch, I thought it would be cool to take a bento lunch instead.

And here it is:


A ham sandwich with queso fresco and chipotle mayo, red grapes, Ritz, peanuts, fruit gummy snacks, and a little can of fruits in their juice. 

No animal shaped sandwiches, but it was certainly healthier than a guacamole six dollar burger from Carl's Jr. LOL

The weekend is close!! Enjoy =)

Stresssssssss

So... I promise to post more often and then disappear huh? lol
Please forgive me!! The date for my Law School Admissions Test is getting close and I'm stressing out. Plus my little one has been sick all weekend =(
He's much better now though!

I hope everyone had an awesome long weekend!
I'm so happy summer is over! The weather has changed dramatically here in Southern California, and I'm now wearing scarves and sweaters... Oh Fall, how I missed you!

Anyways, I pinky promise to post something good tomorrow as soon as the little booger takes his nap!

My Worst Nightmare




It came true. I woke up and saw Julián standing up on his crib. We lowered the mattress as much as we could that same day but I’m still panicking. My heart stops every time he stands up, I’m afraid he’ll hurt himself.

Does this feeling ever goes away? 

I’m so sure he’ll start walking soon… ohh more nightmares coming true!

My cooking attempts: Thai Chicken Salad


I’m not a cook. Until recently, I would only step into a kitchen when it was absolutely necessary. It’s not that I don’t know how to cook, I’m just a bit lazy when it comes to cleaning up the mess :P
But now that we have little Julián, dinner is the only time my boyfriend and I have for ourselves: Netflix and good food, nothing gets better than that! So cooking is slowly becoming a really enjoyable part of my routine. (I still don’t like cleaning up so S takes care of that!) I like looking online for different recipes and experimenting with new flavors. Some of the food comes out good, some is barely edible, and occasionally we’ll have these plate licking meals. Like this Thai Chicken Salad:


OMG!! This thing is so good we’ve been eating it for two days! It’s very easy and quick, nothing fancy but oh so yummy.
This is how I made it:

(I didn’t really measure the quantity of the ingredients, just kind of used what looked good enough)

-       A large chicken breast (cooked and shredded)
-       A bag of mixed greens salad
-       About a cup of shredded carrots
-       3 green onions (sliced)
-       ½ cup of chopped cilantro
-       A large cucumber (sliced in cubes)
-       A cup of bean sprouts
-       ½ cup of peanuts or cashews (optional)
-       Peanut sauce or dressing of choice
-       Salt & pepper

Mix everything in a bowl and listo! Told you it was easy :P
Last night for dinner we had it with pita bread and peanut sauce. The sauce was store bought, but you can make your own by mixing peanut butter, rice vinegar, and soy sauce. We served the “Thai pita pockets” with onion rings just because we like onion rings lol (sorry, I forgot to take a pic)

And today for lunch, we wrapped it with rice paper and made super yummy spring rolls. I added garlic chili sauce to the peanut sauce to give it a kick.

 (My spring rolls look more like burritos ha!)

It’s so fresh and summery, and really fast to make for those quick lunches/dinners! The possibilities are endless: Side salad, wrap, sandwich, on top of rice, with some garlic toast, etc…
Martha Stewart would be proud! LOL
